In terms of nutrition, just one cup of pea shoots carries 50% of your daily vitamin C.
Pea tendrils, or Pea vines as they are sometimes called, are the thread, leaflet and blossom of the snow pea, snap pea or sweet pea plant. Their flavor is grassy sweet and nearly identical to the flavor as the typically harvested part of the plant's foliage, the pea pods. Pea tendrils can be used fresh or treated as a wilting green; utilizing a little heat, olive oil, sea salt and pepper and the greens are transformed into a substantial element of any savory dish. Finishing the pea tendrils with citrus brings out flavor and preserves their color. Reference Credit: Specialty Produce.com
